Freeze 1 1/2 pork loin for 2 hours.
Cut pork into thin strips against the grain.Trim fat. Place pork in container.
Mix 1/4 cup soy sauce, 2 tbsp honey, 1 tbsp olive oil, 2 tsp rice vinegar and 2 tsp minced garlic in container.
Marinate for 2 to 3 hours.
Heat a skillet on medium-high heat.
Render fat for 10 – 15 minutes.
Add pork in batches to skillet.
Cook pork for 1 minute on each side (or less).
When all pork is cooked, add leftover marinade to skillet.
Cook on high heat to reduce into sauce.
Optional: add soy sauce, rice vinegar, cooking wine or mirin before removing from heat.
