Roast Pork

Ingredients

  • 4 – 6 lbs bone-in pork shoulder
  • 8 cloves garlic
  • 1/2 cup soy sauce
  • 4 tbsp honey
  • 4 tsp rice vinegar
  • 3 tsp ginger
  • salt

Instructions

Prepare Pork Roast

  • Pat dry 4 – 6 lbs bone-in pork shoulder.
  • Cut slits in a one-inch grid patter in pork fat.
  • Stuff garlic slices into grid.
  • Mix 1/2 cup soy cause, 4 tbsp honey, 4 tsp rice vinegar and 3 tsp ginger.
  • Soak pork in marinade in gallon ziplock bag or roasting pan.
  • Refrigerate for at least one hour or overnight.

First Bake

  • Preheat oven to 300.
  • Optional: add vegetables to bottom of roasting pan.
  • Place pork in roasting pan, skin side up.
  • Pour marinade into bottom of pan.
  • Wipe marinade off skin.
  • Generously salt skin
  • Cover pan with aluminum foil. No gaps.
  • Bake for 3 hours.

Raise oven temperate to 400

  • Rotate roasting pan 180 degrees.
  • Remove foil.
  • Bake for 1 hour.

Raise oven temperature to 500

  • Bake for 10 minutes.
  • Rest on counter for 20 minutes.
