Honey Pecan Shrimp

Ingredients

Breaded Shrimp

  • 1 lb shrimp
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 1 egg
  • 1 tbsp water
  • 1/2 tsp salt
  • 1/4 tsp pepper

Honey Pecan Sauce

  • 3/4 cup honey
  • 1/2 cup crushed pecans
  • 4 tbsp heavy whipping cream
  • 2 tsp rice vinegar

Instructions

Breaded Shrimp

  • Mix 1/2 cup flour, 1/2 tsp salt and 1/4 tsp pepper on a plate.
  • Mix 1 egg and 1 tbsp water in a cup.
  • Place 1 cup panko bread crumbs on another plate.
  • Pat dry the shrimp.
  • Heat coconut oil in cast iron skillet to fully submerge shrimp.
  • Roll shrimp in flour, dip in egg and roll in bread crumbs.
  • Fry shrimp for 1 1/2 – 2 minute (or less).
  • Place on wire rack.

Honey Pecan Sauce

  • Whisk 3/4 cup honey, 4 tbsp heavy whipping cream and 2 tsp rice vinegar in sauce pan.
  • Heat mixture on medium-low heat for 10+ minutes.
  • Stir often.
  • Add smashed pecans.
  • Cook for additional 3 minutes.

Notes

Sauce is amazing!! Would work great on chicken, salmon, pork, sweet potatoes, roasted carrots, brussel sprouts, green beans or ice cream!!!
