Scalloped Corn
Ingredients
Casserole
- 2 eggs
- 1 cup milk
- 2/3 cup crushed saltines
- 1 can cream corn
- 1 lb frozen corn thawed
- 1/4 cup grated onion
- 3 tbsp melted butter
- 1 tbsp sugar
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 clove minced garlic
- 1/3 cup shredded cheese optional
Topping
- 1/2 cup crushed saltines
- 1/4 cup melted butter
- salt
- paprika
- pepper
Instructions
Casserole
- Preheat oven to 350.
- Whisk 2 eggs.
- Add 1 cup milk and 2/3 cup crushed saltines.
- Mix in 1 can cream corn.
- Add 1 lb bag frozen corn (thawed), 1/4 cup grated onion, 3 tbsp melted butter, 1 tbsp sugar 3/4 tsp salt, 1/2 tsp pepper, 1/2 tsp paprika, 1 clove minced garlic and 1/3 cup cheddar cheese if using.
- Spray 8 x 8 baking dish.
- Pour mixture into baking dish.
- Bake for 20 minutes.
- Mix 1/2 cup crushed saltines, 1/4 cup melted butter and dash of paprika, salt and pepper.
- Add crumb topping to casserole.
- Bake for another 20 minutes or until the casserole is set and top is golden brown.
