Scalloped Corn

Ingredients

Casserole

  • 2 eggs
  • 1 cup milk
  • 2/3 cup crushed saltines
  • 1 can cream corn
  • 1 lb frozen corn thawed
  • 1/4 cup grated onion
  • 3 tbsp melted butter
  • 1 tbsp sugar
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 clove minced garlic
  • 1/3 cup shredded cheese optional

Topping

  • 1/2 cup crushed saltines
  • 1/4 cup melted butter
  • salt
  • paprika
  • pepper

Instructions

Casserole

  • Preheat oven to 350.
  • Whisk 2 eggs.
  • Add 1 cup milk and 2/3 cup crushed saltines.
  • Mix in 1 can cream corn.
  • Add 1 lb bag frozen corn (thawed), 1/4 cup grated onion, 3 tbsp melted butter, 1 tbsp sugar 3/4 tsp salt, 1/2 tsp pepper, 1/2 tsp paprika, 1 clove minced garlic and 1/3 cup cheddar cheese if using.
  • Spray 8 x 8 baking dish.
  • Pour mixture into baking dish.
  • Bake for 20 minutes.
  • Mix 1/2 cup crushed saltines, 1/4 cup melted butter and dash of paprika, salt and pepper.
  • Add crumb topping to casserole.
  • Bake for another 20 minutes or until the casserole is set and top is golden brown.
