Preheat oven to 350.
Whisk 2 eggs.
Add 1 cup milk and 2/3 cup crushed saltines.
Mix in 1 can cream corn.
Add 1 lb bag frozen corn (thawed), 1/4 cup grated onion, 3 tbsp melted butter, 1 tbsp sugar 3/4 tsp salt, 1/2 tsp pepper, 1/2 tsp paprika, 1 clove minced garlic and 1/3 cup cheddar cheese if using.
Spray 8 x 8 baking dish.
Pour mixture into baking dish.
Bake for 20 minutes.
Mix 1/2 cup crushed saltines, 1/4 cup melted butter and dash of paprika, salt and pepper.
Add crumb topping to casserole.
Bake for another 20 minutes or until the casserole is set and top is golden brown.
