Banana Muffins

Ingredients

  • 3 ripe bananas or 350 g frozen banana
  • 1 1/4 cup flour
  • 1 cup sourdough starter
  • 1/2 cup honey
  • 1/4 cup melted butter
  • 1 room temperature egg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder

Instructions

  • Preheat oven to 325.
  • Mash 3 ripe bananas.
  • Add 1 cup sourdough starter, 1/2 cup honey, 1/4 cup melted butter, 1 room temperature egg and 1 tsp vanilla extract.
  • Whisk together 1 1/4 cup flour, 1 tsp baking soda and 1/2 tsp baking powder.
  • Fold dry ingredients into wet.
  • Bake for 19 minutes.

Notes

Try adding 1 tsp cinnamon next time.
