Add 2 tbsp lemon juice and 1/4 tsp lemon zest to 12-inch high skillet.
Peel and slice apples into 1/8 inch pieces one at a time.
Add each apple to skillet and stir.
Heat on medium.
Add 1/2 cup brown sugar, 1/2 cup sugar, 1/3 cup flour, 1 1/2 tsp cinnamon, 3/4 tsp nutmeg and 1/2 tsp cardamom.
Stir until no patches of flour or cinnamon.
Cover with lid.
Stir every 3 minutes for 20 minutes.
Remove from heat.
Add 2 tsp vanilla.
Transfer to baking pan.
Chill in fridge (or freezer).
