Freeze 1 1/2 lbs steak for 2 hours.
Cut steak into thin strips against the grain.Trim fat. Place steak in container.
Mix 1/4 cup soy sauce, 2 tbsp honey, 1 tbsp olive oil, 2 tsp rice vinegar and 2 tsp minced garlic in container.
Marinate for 1 - 2 hours. Do not over marinate. Heat a skillet on medium-high heat.
Render fat covered for 10 - 15 minutes.
Add steak in batches to skillet.
Cook each side for 1 minutes (or less).
When all steak is cooked, and leftover marinade to skillet.
Cook on high to reduce into sauce.
Optional: add soy sauce, rice vinegar, cooking wine or mirin before removing from heat.
