Remove turkey from fridge 2 hours before cooking.
Chop 1/2 of rosemary, thyme and sage.
Mix 1 cup butter, herbs and 8 cloves minced garlic.
Quarter red onion, lemon and apple.
Pat dry turkey.
Insert red onion, lemon, apple and 1/2 herbs into turkey.
Spread butter on turkey.
Wet inside and outside of paper bag with olive oil.
Place turkey in bag.
Place turkey breast side down in roasting pan.
